THE BASICS: URBAN HEALTH FOOD

  • We recommend high quality foods (organic – regional – seasonal).
  • A drastic reduction of refined sugars, lactose and grains containing gluten, wheat in particular.
  • For your basic nutrition, we recommend a „moderate carb concept“:
    30-40% carbohydrates (primarily from tubers and root vegetables, easily digestible legumes and less from various gluten-free grains and pseudograins).
    25-35% proteins (primarily from nuts, seeds, legumes, green leafy vegetables, pseudograins, eggs, lean meats and fish).
    30-40% fat (primarily from nuts, seeds, avocados, coconut oil, olive oil, flaxseed oil, rapeseed oil, pumpkin seed oil, a little butter and oily fish).
  • Paying particular attention to the acid-base balance.
  • Getting a sufficient antioxidant supply.
  • The 80/20% rule: if you eat well 80% of the time, you should be able to allow for exceptional circumstances, where you’ll eat unhealthy or sugary foods.

We will coach you through a 3-month programme focused on

  • the reduction of body fat percentage
  • the build-up of lean muscle
  • the adjustment of your blood sugar levels.

It will consist of

  • an individual dietary schedule,
  • plant and herbal supplements and

Supplements

Most of us know what we would have to do to make things better. More of this, less of that, and immediately, our nutritional balance would be much improved.

A vegan diet contains many sensible ideas (see above) and does, in theory, cover all nutrient requirements. In real life however, a vegan diet might be a bit more difficult to maintain. Critical nutrients advocated by many modern nutritionists shouldn’t be overestimated – the results of current studies are as of yet premature. Nevertheless, it is obvious that many proponents of veganism end up on a very unbalanced diet, focusing on standard dishes which are often low in nutrients. Blood-boosting, protein-rich plants and other produce aren’t given the necessary attention.

  • Due to physiological changes during pregnancy, a sufficient fluid intake should be ensured: alongside still water, bloat-reducing herbs like anise, caraway or fennel are recommended as well as green leaves, due to their high mineral and bitter compound content.
  • Nutrient requirements in general will increase. Particular attention should be paid to foods containing the blood-boosting nutrients iron, vitamin B12, vitamin B6, folic acid and zinc, like green leaves, beetroot, millet, amaranth, sesame, poppy, pumpkin seed, legumes in general (but check for tolerance!) as well as lean meats. Also advisable are protein sources like whole grains, green leafy vegetables, sprouts, fermented foods like specific soy products (miso, tempeh, soy sauce) or pickled vegetables, avocados etc.
  • Several small snacks throughout the day are better than 3 large meals.
  • In general, dishes cooked from scratch are preferable in order to guarantee tolerance and reduce pressure on the digestive system.
